Chicken breast with spinach salad


A light dish based on soft chicken breast brushed with mustard and seasoned with dried tomatoes, fresh spinach and balsamic vinegar.


Ingredients


Main course For 4 people


4 chicken breasts of approx. 140 g

salt

pepper

2 tablespoons of grainy mustard

6 tablespoons of peanut oil

1 teaspoon of honey

2 tablespoons of white balsamic vinegar

60 g of dried tomatoes

200 g of spinach for salad

3 tablespoons of salted roasted peanuts


How to proceed


Preparation:

ca. 30 minutes


Season the chicken breasts with salt and pepper and brush them with half the grainy mustard. Brown them in 1/3 of the oil over medium heat for approx. 10 minutes. Mix the rest of the mustard and oil with the honey and balsamic vinegar. Season with salt and pepper. Cut the tomatoes into strips. Mix the spinach with the peanuts and tomato strips.
