Appetizing and full of flavor, the chicken rolls, stuffed with zucchini and ham and scented with sage, are ideal to be enjoyed with a risotto.

2 courgettes
4 chicken breasts

8 slices of raw ham, e.g. jamón serrano
of oil for cooking
2 sprigs of sage

With a potato peeler, cut the courgettes into thin tongues. Halve the chicken breasts horizontally. Place the slices between two sheets of oiled paper or cling film and thin them by beating them with the meat tenderizer. Season the chicken slices with salt and pepper. Cover them with the courgette slices and turn half of the breasts, with the courgettes facing down. Stuff all the chicken breasts with the ham and roll up tightly. Secure the rolls with a toothpick. Heat the oil in a pan and brown the rolls on all sides for approx. 10 minutes. After 8 minutes of cooking, add the sage leaves and brown them with the meat. Wrap the rolls in alu paper and let them rest for approx. 5 minutes. Cut the rolls crosswise in two and serve with the sage.
